- The 20 cm Japanese GYUTOH knife from the MIYABI 5000MCD series makes an impression with its relatively thin yet stable blade, featuring an authentically Japanese profile. The edge is symmetrical with a 19-degree angle, providing the double bevel Honbazuke edge with excellent cutting properties, allowing for easy handling of even the most delicate tasks. The blade is made from a core of MicroCarbide MC63 powder steel, covered by 100 layers of steel. These layers form the characteristic damask pattern that makes each knife truly unique. The CRYODUR blade is also ice-hardened at -196ºC in a special process that achieves a hardness of approximately 63 Rockwell. The “D” shape of the handle is not only visually appealing but also enhances the use of the knife. It is made of Masur birch, a beautiful wood with grain patterns that form unique lines and intersecting stripes. Thanks to its perfect balance, the handle ensures effective and effortless work, providing maximum control while cutting. The Miyabi GYUTOH knife is an exceptional cutting tool.
